  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1/4 cup red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 6 oz queso fresco, crumbled (or favorite fresh cheese)
  • 1 avocado, seeded and diced

Fiesta Salad Dressing

  • 6 tablespoons extra virgin olive oil
  • 4 tablespoons fresh lime juice
  • 2 teaspoons freshly chopped cilantro
  • salt and freshly ground black pepper, to taste

Preheat the oven to 375 F. Place the frozen strips on a baking sheet and heat them for 18 to 22 minutes, or until hot.
