If you love biting into creamy goodness as much as I do, have I got an easy one skillet smothered chicken recipe for you! I’m not sure what it is about a creamy, warm, hardy meal that makes me feel all warm and fuzzy inside, but this one definitely does. And I’m sure it will do the same for you.
It’s truly a restaurant quality meal that can wow any night of the week, or even as you entertain guests over the holidays. That’s why it’s become one of my favorite one skillet chicken dinners. Add in your favorite side, and you have a beautiful, tasty meal to share! Plus it has all our family favs, pollo (chicken), hongos (mushrooms), queso (cheese), a little bit of albácar (basil), and Nestle® Media Crema, a shelf-stable table cream that can be used in both savory and sweet dishes.
The versatility of the Media Crema, and the fact that it doesn’t need to be refrigerated, is an added bonus when you’re trying to whip up something fancy for your familia (family) or any drop-in guests. That’s why it’s a pantry staple.
Here’s how much you’ll need of everything to recreate it for yourself.
One Skillet Smothered Chicken Ingredients:
- 4 boneless skinless chicken breasts
- salt and pepper, to taste
- 2 tbsp olive oil
- 1 cup cremini mushrooms, chopped
- ½ tsp red pepper flakes (or more to taste)
- 1 can Nestle® Media Crema
- 3 tbsp parmesan cheese
- 2 tbsp chopped basil
How to Make this Easy One Skillet Smothered Chicken Dinner:
Add 1 tbsp of olive oil into a large skillet and cook the chicken, on medium high heat, until cooked through (meaning there is no pink to be found in the center).
Remove the cooked chicken from the skillet and set it aside.
Add in another tbsp of olive oil into the same skillet and cook the mushrooms. After they’ve cooked for a minute, stir in the red pepper flakes.
Once the mushrooms are cooked through, add in the can of Nestle® Media Crema.
Now stir in the basil and the parmesan cheese. Allow it to simmer and remove the sauce from the heat, but keep stirring until the cheese has melted into the cream, If you don’t like your sauces too creamy, I’d encourage you to add in 1/4 cup to a 1/2 cup of chicken broth before you remove the sauce from the heat. If you think the creamier the better, then you’ll definitely want to double everything that goes into the sauce so you’ll have extra to top your chicken with.
Add the chicken back into the pan and coat each piece thoroughly.
Plate each coated piece and top with extra sauce, and a sprinkle of chopped basil. Add your favorite side, and serve. Mmmm.
