The holidays are definitely in full swing and so are the potlucks and holiday gatherings. That means a lot of food, fun, laughter, and the inevitable clean up, but it’s all worth it because the holidays are all about spending time with one another. That’s why whether I’m hosting a gathering or attending someone else’s soiree, I aim for easy to make and easy to clean up meals. Enter my festive Pistachio Fruit Salad. If you’ve never had it, you’re in for an easy to make, fluffy, creamy treat.
Here’s what you’ll need.
1 (20 ounce) can crushed pineapple with juice
1 (3 ounce) package instant pistachio pudding mix
1 carton (12 ounces) whipped topping
1 (15-25 ounce) can fruit cocktail, drained
1/2 cup chopped nuts (pecans, pistachios or walnuts)
2 cups miniature marshmallows (Optional. I don’t use them in mine, but many people love it in theirs.)
Directions:
Combine the pistachio pudding mix with the crushed pineapple (with juice) in a large bowl.
Fold in the drained fruit cocktail, whipped topping, and nuts (leaving some cherries and nuts on reserve to sprinkle on top just before serving.)
Cover, and refrigerate until chilled.
